Tantalise your tastebuds with my three favourite flavours for Spring and Summer wedding cakes
Over the years I have added a wide variety of flavours to my cake menu. Every wedding is special and unique and so I want my clients to be able to tailor their wedding cake to suit them. Not only does that apply to the final decoration but also to the flavours contained inside.
With so many options on offer I suppose that it is inevitable that I get asked the question “what are the most popular flavours”?
To be honest, it’s a tricky question to answer! Every couple has their own thoughts and opinions. Some couples choose unique flavour combinations, some simply choose their favourite flavours after tasting their samples whereas others opt for the safe choices of chocolate or vanilla.
So instead of listing the “most popular” flavours, I thought it would be much more useful if I shared some of my favourite flavours (although calling them my “favourites” really is a bit misleading because I love all of the flavours on my cake menu – I wouldn’t offer them otherwise!). I’m going to start with my top picks for Spring and Summer weddings but rest assured that I will be sharing my Autumn and Winter favourites at a later date!

Vanilla and Passionfruit
Vanilla is a lovely flavour but, let’s face it, it can be a little boring! I find that simple vanilla cake often doesn’t get eaten so I prefer to jazz it up so that your guests will be clamouring to try it. Passionfruit is the perfect accompaniment to the subtle vanilla providing a lovely kick of flavour and adding some additional tropical vibes.
Lemon and Elderflower
I have a soft spot for all things lemon and, in my opinion, you can’t go wrong with a bit of zingy lemon curd! Combining it with the flavour profile of elderflower provides a quintessentially British twist. It’s fresh, it’s summery and it’s delicious – what more could you want?!
Raspberry and White Chocolate
Chocolate is always a winner and when you combine it with fresh fruits that are in season and at their best then you can’t really go wrong. Juicy raspberries are the perfect accompaniment to the creamy white chocolate and it results in a beautiful light cake that is full of flavour.

Did any of these flavours made it onto your shortlist? If I could provide any advice then it would be to think about what ingredients, and specifically which fruits, are at their best at this time of year. I offer a number of cake flavours which utilise raspberries, lemons, passionfruit or strawberries and each one of them would be perfect for a spring or summer celebration. I always use fresh fruits in my baking and, for that reason, I don’t even offer cakes containing summer fruits for Winter celebrations – they just don’t taste the same.
